The HMS Surprise discussion reminded me of Jean Boudriot's masterpiece, Le vaisseau de 74 canons. This 4 (oversize) volume work details every aspect of the construction, rigging and operation of a 74. I believe it is available in English, but I'm not sure. Look here to get an idea of this wonderful (if expensive) book:

Looks like it was published in english in 1986 (Vol.1 ISBN 087021621X, 9780870216213 & Vol.2 ISBN 0870216228, 9780870216220) and in 1988 (Vol.3 ISBN 087021618X, 9780870216183). I haven't found a listing for Volume 4
